  • 1.5 pounds of extra-lean ground turkey (or any lean meat of your choice)
  • 1.5 tablespoons of a savory sauce like Worcestershire sauce
  • 1 large egg, beaten
  • 1 minced yellow onion
  • Approximately 1/3 cup of roughly chopped parsley
  • 3 cloves of minced garlic
  • 1.5 teaspoons of salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of dried dill
  • 1/2 teaspoon of onion powder
  • A pinch of red pepper flakes (if desired)
  • 42 ounces of tomato sauce, divided into portions (equivalent to around 5 cups or three 398-milliliter cans)
  • 1 medium-sized head of green cabbage, with about 18 leaves reserved for stuffing and 8 to 10 leaves for layering the dish
  • Half a cup of water (reserved from boiling the cabbage)
  • Optional: chopped fresh dill for garnish

Directions:

Start by cooking the rice according to the package instructions, and while that’s happening, preheat your oven to 350 degrees Fahrenheit.

In a large bowl, combine the lean ground beef with Worcestershire sauce, egg, cooked rice, minced onion, parsley, minced garlic, salt, black pepper, dried dill, onion powder, ½ cup of tomato sauce and red chili flakes (if you prefer a little heat). Time to prepare the cabbage! In a large pot of boiling water, add the whole head of green cabbage and let it boil for about 8 to 10 minutes. Be sure to turn the cabbage over halfway through to ensure even cooking. Once the cabbage is cooked, carefully remove it from the pot, but don’t discard the water just yet – you’ll need it later.

Now that the cabbage is cool enough to handle, carefully peel off the leaves, and while you’re at it, cut out the core from each leaf. You might need to return the cabbage to the boiling water from time to time to soften more leaves. But don’t worry, it’s all part of the fun.

Time to stuff the cabbage leaves! Lay some cabbage leaves on the bottom of a deep 9″ x 13″ baking dish or roasting pan. Take one leaf at a time and place about ¼ cup of the ground beef mixture on top. Fold in the sides and roll it up, placing it seam side down in the prepared dish. Continue until all the ground beef mixture and cabbage leaves are used up.

Now for the grand finale – the tomato sauce! Take the remaining tomato sauce and combine it with half a cup of the leftover cabbage water. Give it a good whisk to ensure everything is well incorporated. Pour this luscious tomato sauce over the cabbage rolls, and you’re ready to go!
